Asparagus Chicken Egg White Terrine
Cook and dice chicken breast
Lightly steam and chop asparagus
3-4 eggs with yolk removed
Diced scallions
Salt and pepper
Wedged small apples for garnish
–Place chicken and asparagus into a small mold pan (glass or stainless steel). Add your favorite fresh herbs and spices. Pour all egg whites over the contents in baking pan. Top with 1/2 tsp of MCT oil and scallions. Place the mold pan into another pan and create a water bath. Bake until done at 350 degrees. Let cool completely overnight. Garnish with fruit and fresh herbs.
